Here’s our delicious celery-root and whisky mousseline.
Ingredients :
1 large celery root, peeled and cut into chunks
1/2 lemon, juiced, divided
salt & pepper to taste
1/3 cup homemade vegan cream ( follow the link for the recipe : https://domainedebrocfontaine.fr/2023/07/03/the-best-vegan-cream-youll-find/ )
2 tablespoons of Whisky (check it’s a vegan one!)
2 tablespoons vegan butter
Instructions :
Place celery root, lemon juice, and salt in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain.
Blend celery root, soy cream, whisky and vegan butter in a blender until smooth.
Push puree into a bowl through a fine-mesh strainer with a spatula until puree is completely smooth.
