Here is a creamy Vegan Pea Dip recipe
2 cups green fresh peas
1/4 cup tahini
2 tablespoons lemon juice
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
2 tablespoons extra-virgin olive oil
Salt and pepper to taste
- If using frozen peas, cook them according to the package instructions until tender. If using fresh peas, blanch them in boiling water for 2-3 minutes until bright green and slightly tender. Drain and set aside.
- In a food processor or blender, combine the cooked peas, tahini, lemon juice, minced garlic, cilantro, olive oil, salt, and pepper.
- Blend until smooth and creamy. If the mixture is too thick, add a little water, 1 tablespoon at a time, until desired consistency is reached.
- Taste and adjust the seasoning as needed, adding more salt, pepper, or lemon juice if desired.
- Transfer the pea dip to a serving bowl. If desired, garnish with chopped fresh herbs, a drizzle of olive oil, or a sprinkle of paprika.
