Elegant Vegan Pea Risotto with Mint and Lemon

Here is an elegant Vegan Pea Risotto with Mint and Lemon recipe :

Ingredients:

2 cups fresh green peas

1 onion, finely chopped

2 cloves of garlic, minced

260gr Arborio rice

1 liter of homemade vegetable broth ( https://domainedebrocfontaine.fr/2023/07/03/homemade-vegetable-broth/ )

1/4 cup vegan organic white wine2 tablespoons nutritional yeast

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

1/4 cup fresh mint leaves, chopped

Salt and pepper to taste

Vegan parmesan cheese for garnish

Instructions:

In a medium-sized pot, bring the vegetable broth to a simmer. Keep it warm on the stove.In a large pan or pot, heat the olive oil over medium heat.

Add the chopped onion and garlic and sauté until translucent and fragrant.

Add the Arborio rice to the pan and stir well to coat it with the onion and garlic mixture. Toast the rice for about 2 minutes, stirring constantly.Pour in the white wine and stir until it is absorbed by the rice.

Begin adding the warm vegetable broth to the rice, one ladle at a time. Stir continuously until the broth is absorbed before adding the next ladle. Repeat this process until the rice is cooked al dente, which usually takes about 20-25 minutes. Adjust the heat as needed to maintain a gentle simmer.

Meanwhile, blanch the fresh peas in boiling water for 2-3 minutes until bright green and slightly tender. Drain and set aside.

When the rice is almost done, add the cooked peas, lemon zest, and nutritional yeast to the pan. Stir well to combine.

Once the rice is cooked to your desired texture, remove the pan from the heat. Stir in the lemon juice and fresh mint leaves. Season with salt and pepper to taste.

Let the risotto rest for a few minutes before serving to allow the flavors to meld together.

Serve the pea risotto hot, garnished with a sprinkle of vegan parmesan cheese.

Note: Risotto is best served immediately after cooking as it tends to thicken upon standing. If you have leftovers, you can reheat them on the stovetop with a splash of vegetable broth to restore the creamy consistency.
