Vegan Mayonnaise :

Ingredients :

100ml soy milk

1/2 to 1 tablespoon apple cider vinegar (depending of taste)

1 tablespoon Dijon mustard

Kala Namak Salt – black pepper (to taste)

Neutral oil (canola or grape seed oil)

A pinch of Tumeric

Optional : dried or fresh herbs, zests, spices, hot sauces etc…

Instructions:

In the blender, add soy milk, mustard and apple cider vinegar to curdle.

Blend slowly at the begining.

Add gently the oil, until it get firm. Keep an eye because it just gets ready fast. You’ll hear it also.

Put in a bowl and add tumeric, kalanamak salt and black pepper.

Then add any others ingredients of your choice (herbs, spices, zest, etc…)
