Spinach Gnocchi

Vegan Gnocchi with Spinach:

Ingredients :

300 g potatoes, peeled and cut into pieces

100 g fresh spinach, blanched and well drained

200 g of wheat flour

1 teaspoon of salt

1 tablespoon of olive oil

Preparation :

Cooking the potatoes: Cook the potatoes in salted water until tender. Drain them well.

Preparing the spinach: Blanch the spinach in boiling water for a few minutes. Drain them and squeeze them well to remove excess water. Chop them finely.

Preparation of the gnocchi dough: Mash the cooked potatoes in a large bowl.

Add the chopped spinach, flour, salt, and olive oil.

Mix until you obtain a homogeneous paste. Shaping the gnocchi: On a lightly floured surface, divide the dough into several pieces.

Roll each piece into a log approximately 1.5 cm in diameter. Cut the sausage into 2 cm pieces to form the gnocchi.

Cooking the gnocchi:

Bring a large pot of salted water to a boil.

Immerse the gnocchi in boiling water. They are cooked when they rise to the surface (about 2-3 minutes). Remove them carefully with a slotted spoon.
