The Domaine of Broc Fontaine, a 400-year Normandy farm property located in Brosville, is nestled in the beautiful Iton Valley.
A lively tree-lined brook crosses the edge of our 3acres; a large vegetable garden producing hundred of varieties of fruits, herbs and vegetables will delight anyone interested in food and cuisine.

OUR VEGETABLE GARDEN
Our vegetable garden and orchard are a witness to the changes that have come about in our lives – disappearing for the decade we were solely in Paris creating the Gentle Gourmet concept and the Paris Vegan day festivals, both responsible for introducing a vegan art de vivre and gourmet vegan cuisine into Paris and France.
As we began to revisit Brocfontaine and especially now that we are established full-time here, the vegetable garden is slowly coming back to life , enhanced by not only the former veganic principles but the newer no-till and regenerative practices that we have learnt and now apply.
As in the past, we will be sowing, planting and cultivating hundreds of varieties of vegetables, fruits, culinary and medicinal herbs, edible flowers and mushrooms.
Our long-term project is to approach self-sufficiency progressively and to teach everything we know to the vast number of avid learners eager to become more independent as individuals and consumers.
There are many possibilities at Brocfontaine, depending upon your wishes and budget. The fee indicated below includes all 3 daily meals as mentioned, use of laundry facilities, professional treadmill with ifit, yoga mats etc.

- a private room in a 2 bedroom duplex apartment with a shared bathroom
- a private cottage with bedroom, bathroom, living room , kitchen ( that can also be shared)

OUR BREAKFAST, LUNCH & DINNER
Over the years we have a developped a way to combine the ease of having meals prepared for students during the week at specific dining times , and giving students the freedom on the week-end to be able to cook from the stock of foods ( or for culinary students, from their own creations), or eat already prepared for you food, at the time of your choosing. This is a highlight for those who like to sleep in on the week-end !
A full breakfast is served as a buffet every morning from 8 :15- 9 :00 at which time classes begin.
Lunch and dinners follow the progress each day in class but generally dinner can be ready by 6PM but for those that wish to eat later , this is also possible. On the week-ends students can eat in our dining room or are free to bring back their meals to their rooms or cottage where there are refrigerators and micro-waves.
OUR CLASS KITCHEN
The heart of our school is the three-room kitchen , fully equipped with an extensive collection of modern culinary and pastry equipment and adorned by a beautiful collection of antique copper that symbolizes the wealth of traditional knowledge and experience we offer. A library with collections on cooking, pastry, nutrition, vegetable gardening and veganism is available to students. Each student benefits from using this large space to practice and imagine how they would set up their future culinary environment.
