Vegan Red Wine Sorbet

Ingredients:

  • 2 cups (480 ml) red wine (choose a vegan-friendly variety)
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water
  • 1 tablespoon lemon juice
  • Fresh berries or mint leaves for garnish (optional)

Instructions:

  1. In a saucepan, combine the red wine, sugar, and water over medium heat. Stir until the sugar has dissolved.
  2. Bring the mixture to a gentle simmer, then reduce the heat to low. Let it simmer for about 5 minutes, allowing the flavors to meld together.
  3. Remove the saucepan from the heat and let the mixture cool to room temperature.
  4. Once cooled, stir in the lemon juice. This will add a touch of acidity and help balance the sweetness.
  5. Transfer the mixture to a shallow, freezer-safe container or a prepared ice cream maker if you have one.
  6. Place the container in the freezer and let it chill for about 1 hour.
  7. After an hour, remove the container from the freezer and stir the sorbet mixture vigorously to break up any ice crystals that have formed. This will help create a smoother texture.
  8. Return the container to the freezer and repeat the stirring process every 30 minutes for the next 2-3 hours. This will prevent the sorbet from becoming too icy and ensure a creamy texture.
  9. Once the sorbet has reached your desired consistency, cover the container tightly and let it freeze for at least 4 hours or overnight.
  10. When ready to serve, let the sorbet sit at room temperature for a few minutes to soften slightly. Scoop into bowls or glasses, garnish with fresh berries or mint leaves if desired, and enjoy!
