Vegan spring tofu rolls

Ingredients:

– For the Ginger Soy Marinated Tofu:

400g firm tofu, pressed and cut into thin strips

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

2 teaspoons freshly grated ginger

2 cloves garlic, minced

– For the Spring Rolls:

200g rice noodles, cooked according to package instructions

12 to 18 rice paper sheets

1 cucumber, julienned

2 large carrots, julienned

Fresh mint leaves

Fresh cilantro leaves

Spring onions, julienned

– For the Peanut Dipping Sauce:

1/2 cup peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon maple syrup or agave nectar

1 teaspoon sesame oil

1 clove garlic, minced

1/2 teaspoon cayenne pepper (adjust to taste)

2 tablespoons chopped seaweed (nori or wakame), soaked and finely chopped

Water (as needed to adjust consistency)

Preparations:

– Ginger Soy Marinated Tofu:

In a bowl, whisk together soy sauce, sesame oil, rice vinegar, ginger, and minced garlic.

Place tofu strips in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes, turning the tofu occasionally to ensure even coating.

– Peanut Dipping Sauce:

In a bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, minced garlic, cayenne pepper, and chopped seaweed.

Add water gradually until you reach your desired dipping consistency. Set aside.

– Assembly of Spring Rolls:

Prepare a large bowl of warm water to dip the rice paper sheets.

Dip each rice paper sheet in the warm water for about 5-10 seconds until it softens.

Lay the softened rice paper on a clean surface.

In the center, place a small handful of rice noodles, followed by marinated tofu strips, cucumber, carrots, mint leaves, cilantro, and spring onions.

Fold the sides of the rice paper over the filling, then fold the bottom and roll tightly.

– Serve :

Serve the spring rolls with the peanut dipping sauce on the side.

Garnish with additional chopped peanuts, sesame seeds, or more fresh herbs if desired.
