Recipe :
Ingredients:
100 g of dried white beans
100g of Paris mushroom
1/2 leek
2 medium carrots
2 small turnips
2 yellow onions
2 medium sized potatoes
60 g of pitted black olives
1 tablespoon of tomato paste
1 clove of garlic
1 bouquet garni
2 cloves
Olive oil
Guérande salt – Black pepper
Instructions :
Wash and chop these vegetables: onions, leek, carrots, potatoes, turnips and mushrooms.
Sauté separately in a casserole with a little olive oil.
Arrange them all – except the potatoes – in a casserole dish.
Add the bouquet garni, clove, tomato paste, chopped garlic, dried beans and olives. Pour water at height.
Cover and cook on low heat for 1 hour and add water if necessary.
15/20 minutes before the end of cooking, add the potatoes.
Serve your cassoulet, if you desire, with vegan sausages, smoked tofu.
Best with a good baguette and french sharp South-West wine.
